Southern Baked Chicken, 11 herbs and spicesThis southern baked chicken recipe was found in a book at my University book store and have been making it ever since. It’s a healthier option to deep frying as it’s baked, but tastes just as good. I tend to melt 1/8 cup butter in the baking sheet before I place the prepared chicken in it as opposed to the cooking spray. I guess I’m a little old fashioned that way.

2 cups flour
1/2 tsp salt
1/2 tsp thyme
1/2 tsp basil
1/2 tsp oregano
1 tbsp celery salt
1 tbsp black pepper
1 tbsp dry mustard
4 tbsp paprika
2 tsp garlic salt
1 tsp ground ginger


  1. Preheat the oven to 350° F. Mix all ingredients well in a large bowl.
  2. Dip chicken pieces in beaten eggs. Turn them over in regular bread crumbs (commercial). Plunge them in the flour-spices mixture.
  3. Place chicken in a baking sheet lightly coated with cooking spray and cover with foil (shiny side out). Cook 40 minutes. Remove the foil then cook for another 40 minutes. Let stand 5 minutes and serve.
