Ginger, Leek and Pear Soup

Ginger, Leek and Pear SoupI love a good soup and this is definitely one. My wife told me that leek soup was not one of her favourites however, after mixing the leeks with pear and some ginger I was able to change her mind.

 

 

  • 2 leeks.
  • 2 pears.
  • 2 medium potatoes.
  • 1 medium onion.
  • 1 tap fresh ginger
  • 4 cups of chicken stock.
  • ½ cup of cream.
  • 1 ¾ oz of butter.
  • Salt and pepper, to taste.
  • Cream, to garnish.
  • Freshly chopped chives, to garnish.
  1. Remove the dark outer leaves from the leeks and discard. Wash well to remove any dirt from between layers and chop fine.
  2. Peel and chop the onions, pears, potatoes and ginger.
  3. In a saucepan, melt the butter and gently sauté the onion, leek and ginger until soft.
  4. Add pears, potatoes and chicken stock, bring to the boil, and simmer for 30 minutes or until the potatoes are tender.
  5. Purée in a blender until smooth, reheat in a clean saucepan, then add the cream, salt and pepper. Thin slightly with milk if required.
  6. Serve with an extra swirl of cream and freshly chopped chives.
