Ramsay’s Sticky Lemon Chicken & Champs

sticky-chickenA nice quick meal. It’s been a while since I’ve posted anything so I thought I’d throw this up as it’s a good, quick go to recipe. I was cleaning up my email and came across this link to one of Gordon Ramsey’s videos. So if you’re looking for a fast yet elegant dinner in a pinch, have at it!


  • 1 large chicken jointed into 8-10 pieces or several drum sticks
  • sea salt and black pepper
  • 3-4 tbsp olive oil
  • 1 head of garlic, halved horizontally
  • few thyme sprigs
  • splash of sherry vinegar
  • 2 tbsp dark soy sauce
  • 3 tbsp honey
  • 1 lemon, finely sliced
  • bunch of parsley, chopped
~Champ (mash)
  • 1 kg floury potatoes, peeled
  • sea salt and black pepper
  • 30g butter
  • 100ml double cream
  • 100ml whole milk plus extra if needed
  • bunch of spring onions, trimmed and chopped


  1. Cut back drumsticks base and chop off end, helps to cook it faster.
  2. Season with salt & pepper
  3. Saute in pan with oil until caramelizes
  4. Toss in garlic, thyme, salt, pepper
  5. Deglaze with sherry vinegar & soy
  6. 5 minutes before done drizzle honey and cover with lemon slices
  7. Toss in chopped parsley at end
~Champ (mash)
  1. Dice peeled potatoes small to cook quickly
  2. Cook in salted water
  3. Meanwhile warm butter, milk & cream in a saucepan
  4. Drain and mash potatoes when cooked through
  5. Combine mash with cream, add onions
  6. Plate with gravy
